Ingredients:
1 cup of raw rice
1/2 cup of grated coconut
1/2 cup of jaggery
1/2 tsp of cardamom powder
1 tbsp of ghee
1/4 tsp of baking soda
Oil for frying
Instructions:
Soak the raw rice in water for about 3-4 hours.
After soaking, drain the water and grind the rice into a fine batter using a mixer or blender.
Add grated coconut and jaggery to the batter and grind it again until the jaggery dissolves completely.
Transfer the batter to a bowl and add cardamom powder, ghee and baking soda. Mix well until everything is combined.
Cover the bowl with a lid and let the batter rest for about 30 minutes.
Heat a paniyaram pan and add oil in each of the molds.
Pour a spoonful of batter into each mold and cook on medium heat until the bottom turns golden brown.
Flip the paniyaram using a skewer or spoon and cook the other side until it's golden brown as well.
Once cooked, remove the paniyaram from the pan and place it on a plate.
Serve the sweet paniyaram hot with a drizzle of ghee on top.
